Stir-Fried Lemony Chicken

3/4 pound boneless chicken — cubed
3 tablespoons lemon juice
1 clove garlic — minced
1 cup Chicken Stock
2 tablespoons corn starch
2 tablespoons honey
1 teaspoon grated lemon rind
2 tablespoons vegetable oil
3 cups broccoli florets
1 large red pepper — cut in strips
1. In bowl, marinate chicken in lemon juice and garlic 10-15 minutes.
2. In small bowl, combine sauce ingredients; set aside.
3. Heat large skillet or wok over medium-high heat, swirl 1 tablespoon of oil around pan; (without marinade) stir-fry chicken 3-4 minutes or until no longer pink inside. Remove and set aside. Add remaining oil to pan; stir-fry broccoli and red pepper 4-5 minutes.
4. Re-stir sauce mixture; add to pan. Bring to a boil, stirring constantly. Add chicken, boil until thickened.
Serve with basmati rice
