Leftover Lamb Shepherds Pie

4 potatoes, mashed
3 cups cooked lamb, chopped
1 onion, finely chopped
1 carrot, diced
1 red or green pepper chopped
1 clove garlic, finely chopped
3 cups broccoli or other vegetables chopped
1 cup mushrooms, chopped
3 tablespoons tomato paste
1 tablespoon flour
½ cup red wine
1 cup chicken stock
1 can diced tomatoes
1 tablespoon HP sauce
1 cup frozen peas
fresh herbs (parsley, basil, oregano)
Salt and pepper
Parmesan cheese (optional)
1. Boil and mash potatoes with milk and margarine
2. Saute onion, carrot, pepper and garlic in olive oil for a few minutes.
3. Add vegetables, lamb, tomato paste and flour and mix over a low heat for 3 minutes.
4. Add red wine, stock, HP sauce, tomatoes, salt and pepper and bring up for a boil. Reduce heat to low and simmer for 30 minutes until liquid has reduced. Turn off heat and stir through peas and fresh herbs.
5. Place in a 12×8 casserole dish and top with mashed potato and Parmesan cheese.
6. Bake in pre-heated 350°F oven for 30 minutes.
