Leftover Lamb Pilaf

Time: 45 minutes
1 tablespoon butter
1 cup basmati rice
2 cups beef broth
1 onion, chopped
30grams raisins
8 ounces-250 grams, chopped cooked lamb
2 garlic cloves, minced
2 tomatoes, chopped
Salt and pepper to taste
1. Melt butter in saucepan, add rice and mix in butter. Add beef broth. Bring to a boil. Simmer for 17 minutes. Stir rice and let cool.
2. Add 1 table spoon of olive oil to a large pan. Cook onion for app 5 minutes. Add the rest of the ingredients except the rice. Cook for app 5 more minutes.
3. Add rice, mix and heat through.
