Oatmeal Raisin Cookies

12 tbs butter (6oz)
1/2 cup sugar (4oz)
1 cup brown sugar (8 oz)
1 egg
2 tbs of water
1 tsp vanilla extract
2/3 cup flour (4 oz)
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda
3 cups quick-cooking oats (12 1/2 oz)
1 cup raisins (6 1/2 oz)
1. Preheat oven to 350°F or 325°F for convection.
2. Cream butter and sugars until light and fluffy. Mix in egg. Mix in water and vanilla.
3. Sift flour, cinnamon, salt and baking soda; add to the mixture and mix well. Add oats and raisins, and mix.
4. Drop 1 tablespoon of cookie dough on cookie sheets lined with parchment paper, flatten with wet fork. Bake for 13 minutes, 11 minutes for convection, until edges are done but centres are still soft. Remove and cool.
