Easy Chocolate Cake

3 cups (360 gm) all purpose flour
2 cups (400 gm) granulated sugar
2/3 cups (75 gm) cocoa powder
2 tsp baking soda
1/2 tsp salt
2 cups (500 mL) coffee or water
1 cup (250 mL) vegetable oil
2 tsp vanilla
3 tbsp cider vinegar
1. In large bowl, whisk together flour, sugar, cocoa powder, baking soda and salt. 
2. Whisk in coffee, oil and vanilla. Stir in vinegar. 
3. Prepare two 8-inch (1.2 L) or 9-inch (1.5 L) round cake pans; Grease and line with parchment paper. Pour in batter, smoothing top. 
4. Bake in 350°F (180°C) oven until cake tester inserted into centre comes out clean. Bake for 33 minutes or until done. 30 minutes for cupcakes.
5. Let cool for 10 minutes. Invert onto rack and remove pan. Remove paper; let cool completely.
Ice with 1/4 cup seedless raspberry jam betweeen cakes and cover with
Chocolate Icing or White Irmine Icing from the New York Times
