Garlic Roasted Poatatoes

Garlic Roasted Poatatoes

Total Time: 45 minutes 
1 1/2 pounds small red or white potatoes 
3 tablespoons olive oil 
2 cloves minced garlic
1/2 teaspoons kosher salt 
1/2 teaspoon freshly ground black pepper 
1 tablespoons minced fresh parsley 
1.  Preheat the oven to 400 degrees F. 
2.  Cut the potatoes in half and place in a bowl with the olive oil and garlic; toss until the potatoes are well coated. 
3.  Transfer the potatoes to a sheet pan and spread out into 1 layer, skin side down. Sprinkle with salt and pepper. Roast in the oven for 40 minutes or until browned and crisp. Do not turn.
4.  Remove the potatoes from the oven, sprinkle with parsley, season to taste, and serve hot.

This also works for sweet potatoes or fries. Make sure potato pieces do not touch.
If cooking on two different racks, cook for 50 or 60 minutes while switching pans after 30 minutes.
