Roasted Sweet Potatoes & Ginger Soup

2 tablespoons olive oil
3 large sweet potatoes, peeled & cut in wedges
5 garlic cloves, peeled
2 tablespoons ginger, minced
1/2 teaspoos salt
1 1/2 cups chicken broth
3 cups water
1. Preheat oven to 375°F
2. In large bowl, mix oil, potatoes and garlic to coat.
3. Place in slightly oiled baking sheets and cook for 20 minutes, turning half way. Remove garlic and cook for another 15 minutes, turning half way.
4. In blender, pulse garlic, ginger, 3 pieces of poataoes, salt and 1/2 cup of broth. Add the rest of the potatoes, broth and water, blend until well puréed.
5. Pour into a large saucepan and bring to a slight boil over medium heat, simmer for 10 minutes.
