1/4 cup water 4 tablespoon shallots — chopped 4 teaspoon fresh tarragon — chopped 2/3 cup dry white wine 1/2 cup chicken broth 2 tablespoon olive oil
1. Discard fat from Rack of Lamb pan, Add water and scrape pan. Transfer to small saucepan. 2. Cook shallots briefly, stirring until wilted. Add tarragon and wine. Cook until wine is reduced by half. Add the broth, cook 1 minute and add oil.
