Nancy’s Blackberry Glaze for Lamb

Serving Size: 2 cups
Preparation Time: 20 minutes
1 tablespoon olive oil
1 garlic clove, minced
2 green onions, diced
1 shallot, diced
1 cup blackberry jam
1 cup orange juice
¼ cup water
1 tablespoon mint sauce
1 tablespoon cornstarch
1 tablespoon water
1. Heat oil and sauté garlic, green onion and shallot for 3 to 4 minutes. Remove from heat.
2. Add jam, orange juice, water and mint sauce. Return to heat.
3. Mix cornstarch and water then add to sauce.
4. Bring to a gentle boil for a few minutes until thickened. Strain. Serve warm.
