Banana Muffins

1 egg
1⁄3 cup vegetable oil
3⁄4 cup brown sugar
2 ripe bananas
1⁄2 cup soy milk
1/2 tablespoons lemon juice
2 tablespoons molasses
1 1⁄3 cups cake & pastry flour (or 1 1/4 cup all-purpose flour)
1⁄2 cup large flake oats (not quick)
1⁄2 cup natural bran
1 1⁄2 teaspoons baking powder
1 teaspoon baking soda
1 apple, diced
1.  Preheat oven to 350F (Cakes).
2.  Line or oil 12 muffin tins.
3.  In a stand mixer bowl, add eggs, oil, sugar, bananas, soy milk, lemon juice and molasses. Mix for a few minutes until well blended.
4.  Add to bowl; flour, salt, baking soda and baking powder. Mix slightly until blended. Add apple and blend.
5.  Divide evenly between prepared muffin cups (to the top).
6.  Bake for 30 minutes, or until muffins tops spring back when lightly touched, and a toothpick comes out clean when inserted in the center of the muffin.
7. Let cool for 10 minutes, then take out of pan.
