Pasta Spinach Soup

2 carrots, cut in small cubes
1 large potato peeled, cut in small cubes
1 onion, diced
1 stalk of celery, cut in small cubes
1 clove of garlic, minced
2 tbsp olive oil
1/4 tsp dried rosemary
4 cups Chicken broth
1/2 cup small pasta
5 cups packed fresh spinach
Freshly grated Parmesan cheese (optional)
Easy but Excellent, our go to soup.
Cooked chicken or turkey can be added in the last few minutes.
1. Heat oil over medium heat in large saucepan: add carrots, potatoes, onion, celery, garlic and rosemary. Cook while stirring regularly for 5 minutes.
2. Add chicken broth and bring to a boil.
3. Add pasta, cover and simmer for 15 minutes, stirring occasionaly.
4. Place a handfull of spinach in the bottom of a serving bowl, add soup and serve with Parmesan if wanted.
