4 cups of cherry tomatoes cut in half
4 cloves of garlic, minced
3 tablespoons of olive oil
1 tablespoon balsamic vinegar
2 teaspoons minced fresh rosemary
1/2 teaspoon of salt
1/4 teaspoon hot pepper flakes
1/4 cup minced fresh basil
1/4 cup Parmesan
340gr spaghetti
1. Preheat oven to 400°F.
2. In a bowl; toss tomatoes, garlic, oil, vinegar, rosemary, salt and hot pepper flakes.
3. Place in a 9 X 13 pan and roast for 25 minutes, turning once.
4. Cook pasta in a pot of salted boiling water while tomatoes and garlic are cooking. Transfer directly from boiling water to a large bowl, add tomato mixture, basil and parmesan. You can use a couple tablespoons of pasta water if necessary.
5. Serve with more freshly grated Parmesan cheese.
This is really easy and a favorite.
