Phoebe's Soy Carbonara

Phoebe’s Soy Carbonara
Recipe By: Adapted from Canadian Living. May 1996

2 tablespoon Olive Oil
1 onion — chopped
1 clove garlic — minced
4 cups green beans — diced
1/4 cup dry sherry or white wine
1 teaspoon oregano — dried
2 tablespoon all-purpose flour
2 1/2 cups soy milk
1 pound bacon — cooked
1/2 cup ham — cooked
1/4 cup fresh parsley — chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb linguine
1. In Large Skillet, heat oil over medium heat; cook onion and
garlic, stirring occasionally, for 5 minutes or until softened. 
2. Add beans to pan and fry for 2 minutes. Mix sherry, oregano and flour in a small jar. Add to pan and cook and cook for another 2 minutes. Add soy milk and cook for for about 12 minutes or until thickened. Stir in bacon and ham, parsley, salt and pepper.
3. Cook pasta. Drain; toss with sauce.
