Dave's Carbonara

Dave’s Carbonara

1/2 cup grated parmesan
1/2 cup grated pecorino romano
2 eggs
Lots of freshly cracked pepper. 
1/2 lb of bacon, cut in pieces 
1/2 cup frozen peas
1/2 cup sliced asparagus
2 shallots, diced
3 garlic cloves , diced
2 tablespoons of butter
1 lb spaghetti 
1/2 cup of freshly chopped spinach
1. Beat eggs, add cheese and pepper and blend. Set aside.
2. Cook bacon in large skillet. Remove from pan
3. Add peas and asparagus to the pan and sauté for 5 minutes. Remove from pan
4. Add shallots and cook for 3 minutes then add garlic and cook for 30 seconds. Add 2 tablespoon of butter to the pan and melt. Add bacon, peas and asparagus.Keep at a low temperature
4. Boil pasta. When the pasta is cooked, transfer to the pan. Scoop out ¼ cup of the pasta cooking water and set aside.
5. Add 2 tablespoons of the pasta water and mix into the pasta for about a minute.
6. Add spinach and toss.
7. Add egg and cheese mixture and toss until pasta is well coated.
