Fettuccine with Shrimp and Greens

Total Time 30 minutes
1/2 red pepper, chopped
2 cups greens (snow peas, broccoli, beans or asparagus)
10 cherry tomatoes halved
1 lb shrimp, shelled
1 tablespoon cornstarch
1/4 teaspoon red pepper flakes
1 lb Fettuccine
1 tb olive oil
2/3 cup bottled clam juice or chicken stock
1 cup fresh spinach and/or arugula
Salt & Pepper
1. Prepare all the items before starting
2. Boil water for pasta
3. Mix Shrimp, cornstarch and pepper flakes in a bowl, set aside
4. With olive oil in a pan, fry red pepper for 2 minutes, add greens and fry for another 2 minutes.
5. Add cherry tomatoes and fry for 2 minutes. Transfer to a warm bowl.
5. While the pasta is cooking, add the juice, cook for two minutes. Add shrimp and spinach/augula and cook for another two minutes
6. Transfer pasta and shrimp mixture to the vegetable bowl. Add pepper and salt. Mix and serve.
