Meatloaf With Herbs

1 slice bread — crumbled
1/4 cup soy milk
1 onion — chopped
1 stalk celery (with leaves) — chopped
1/2 cup fresh parsley — chopped
1/4 cup red pepper — chopped
1/2 teaspoon dried thyme
1 clove garlic — minced
2 tablespoons water — egg substitute
1/2 teaspoon baking powder — egg substitute
1/4 cup ketchup
1/2 teaspoon salt and pepper
1 pound lean ground beef
1. In large bowl, combine bread crumbs and milk. Stir in onion,
celery, parsley, red pepper, thyme, garlic, water, baking powder, ketchup, salt and pepper; mix well. Add beef; mix lightly. Transfer to 9 x 5 inch (2L) loaf pan.
2. Bake in 350F oven for 1 hour or until meat thermometer
registers 170F; drain off fat. Let stand for 10 minutes; cut into thick slices.
Make ahead through step 1, covered and refrigerated for up to three hours. Or through step 2 and serve cold.
