White Cake

1 3/4 cups flour — sifted, 8 1/2 oz
1 1/4 cups sugar, 8 3/4 oz
2 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup butter/margarine 2 1/4 oz
2/3 cup milk/soy milk 5 1/2 fl oz
extra 2/3 cup milk/soy milk 5 1/2 fl oz
1 teaspoon vanilla
1. Have ingredients at room temperature. Preheat oven to 375F (Cakes). Grease and line 2 spring loaded pans.
2. Sift flour, sugar, baking powder and salt, add butter/margarine and 2/3 cup milksoy milk. Mix for 2 minutes at medium speed.
3. Add extra 2/3 cup soy milk and vanilla and mix for another 2 minutes.
4. Pour the batter into two 9″ square pans and bake for about 25 minutes. (35 minutes for a heart shaped pan or in a rectangular pan)
Ice the centre with Deliska Wonder chocolate and the rest of the cake with Quick Chocolate Icing or use Quick White icing.
Can also make 12 large cup cakes.
