Lemon Pie

1/4 cup Egg Replacer
1 cup sugar 
1/4 teaspoon salt
1/3 cup hot water
rind from one lemon
juice from one lemon (1/3 cup)
a few drops of yellow colouring

Graham Crumb Crust (cooked)
1. In a double boiler, mix together Egg Replacer, sugar & salt. Stir until well blended. 
2. Add water, lemon juice, lemon rind & colour. Continue stirring until mixture becomes smooth & thick. Remove top from double boiler and heat on medium stirring until mixture reaches a rapid boil. Remove from heat. 
3. Stir then let cool for 5 minutes. Pour into crumb crust, let cool thoroughly. Refrigerate at least 2 hours before serving.
