1/4 cup – 3 1/4 fl oz olive oil
1 onion — chopped
2 carrots — chopped
4 cloves garlic — minced
4 tablespoons dried basil
3 tablespoons dried oregano
4 tablespoons dried parsley
1 bay leaf
2 28 oz cans tomatoes — chopped
2 5 1/2 oz can tomato paste
salt and pepper
1 1/2 pounds ground beef
1. Heat oil. Sauté garlic, onions, carrot, then add basil, oregano, parsley and bay leaf. Cook for 2 minutes.
2. Add tomatoes, breaking up with spoon; stir in tomato paste, salt and pepper. Bring to a boil; then simmer for at least 1 hour.
3. Cook ground beef in skillet for about 5 minutes or till no longer pink. Drain off any fat. Add beef to sauce.
Double recipe at most. Can be frozen.
