Meat Stuffed Cannelloni

Meat Stuffed Cannelloni

1/2 cup onions — chopped
1 clove garlic — minced
3 tablespoons olive oil
3/4 pound ground beef
6 ounces spinach
1/3 cup Tofutti Cream Cheese
1/2 teaspoon oregano
salt and pepper
1/2 pound Oven Ready Cannelloni
2 cloves garlic — minced
2 tablespoons olive oil
1 28oz can tomatoes
3 teaspoons basil
salt and pepper
1. Brown onions and garlic in oil. Add ground beef and brown. Add spinach, and cook for 5 minutes. Remove excess liquid, and then add Tofutti, oregano, salt and pepper. Stuff cannelloni shells with this mixture, and place in greased baking dish.
2. To make sauce, sauté garlic in oil, add tomatoes and seasonings. Bring to a boil, reduce heat, and simmer for 20 minutes. Pour over cannelloni.
3. Bake at 350F for 60 minutes.
