Spaghetti Aglio Olio and Shrimp

Spaghetti Aglio Olio and Shrimp

Spaghetti for two
1/4 cup olive oil 
3 garlic cloves, minced 
1/4 tsp red pepper flakes 
1/4 cup chicken stock
1/4 cup white wine 
1/4 tsp kosher salt 
1/2 tsp freshly ground pepper 
3 tbs unsalted butter
2 cups spinach, chopped
12 shrimps, shelled
Grated parmagiano-reggiano cheese
1.  Boil water and cook pasta al dente.
2.  Add olive oil, garlic and pepper flakes to pan. Sauté at a low temperature till garlic is golden. 
3.  Add broth and wine, salt and pepper. Cook for 3 minutes at a slow boil. Add butter
4.  In a a large serving bowl, add spinach.
5.  Put some pasta water aside. Transfer pasta directly to serving bowl. Mix with spinach.
6.  Add shrimp to sauce and cook for about 3 minutes
7.  Add sauce to serving bowl and mix through. Add some pasta water if needed.
Serve with grated cheese.
