Rice With Carrots

1 tablespoon olive oil
1 shallot — finely chopped
1 carrot — julienned
1 clove garlic — minced
1 cup rice
1 1/2 cups water
1. Heat oil. Add the shallot, carrot and garlic. Cook briefly until shallot is wilted.
2. Add the rice, stir. Add the water. Bring to a boil and cover closely. Simmer for 17 minutes.
3. Fluff rice, cover and let it sit for 10 minutes.
