Marinade;
1/4 c. soy sauce
1/4 c. vegetable oil
1/4 c. honey
1 tbsp. cornstarch
2 cloves garlic, crushed
1/2tsp. crushed red pepper
1/4 cup water
2/3 of 16oz package of dried vermicelli (Bánh Phở)
2 tablespoon vegetable oil
1 small onoin chopped
1 red pepper chopped
1 cup mushrooms , sliced
2 cloves garlic, chopped
1 tbsp ginger, chopped
2 cups green beans or broccoli or asparagus
2 carrots, thinly sliced
32 raw shrimps
1 bok choy, diced
2 scallions, sliced
1. Combine marinade ingredients in a bowl and set aside.
2. Let noodles soak in hot water for 6 minutes. drain. Keep a pot of water with boiling water ready to cook the noodles.
3. In wok or nonstick skillet, heat oil over medium-high heat; fry onions for a 2 minutes, add pepper and fry for 2 minutes, add mushroom and fry for 2 minutes. Stir in garlic and ginger.
4. Add broccoli and carrots, fry fro 4 minutes.
5. Boil noodles for 2 minutes .
6.Add shrimps and fry for 1 minute then add bok choy and fry for 1 minute.
7. Add drained noodles and sauce, cook for 3 minutes while constantly mixing.
6. Serve and sprinkle scallions over stir-fry.
