Dave's Springtime Carbonara

Dave’s Springtime Carbonara

1 cup of grated blend of parmesan & romano cheeses
3 eggs
Lots of freshly cracked pepper. 
1/2 lb of bacon, cut in pieces 
2 shallots, diced
3 garlic cloves , diced
1 cup frozen green beans or peas
1 cup asparagus, diagonanly sliced
2 cups baby bok choy, diced
2 tablespoons of butter
1 cup of freshly chopped spinach
12 ounces spaghetti 
1. Beat eggs, add cheese and pepper and blend. Set aside.
2. Cook bacon in large skillet. Remove from pan. Keep 1 tablespoon of fat.
3. Add shallots and cook for 3 minutes then add garlic and cook for 30 seconds.
4. Add green beans, asparagus and bok choy, sauté for 5 minutes. Add butter and spinach to the pan and wild the spinach. Keep at a low temperature
5. Scoop out 1/2 cup of the pasta cooking water and set aside. Transfer cooked pasta to the pan and toss.
7. Add egg and cheese mixture and toss until pasta is well coated.
