Planked Salmon

1/2 salmon fillet
Rock or coarse salt
Brown Demerara sugar or brown sugar
1 cedar plank 6″ wide and length of salmon
1. Soak cedar plank in cold water for several hours.
2. Prepare filet with skin on one side and no bones. Wash filet in cold water, pat dry.
3. Evenly coat filet with salt, let stand for 1/2 hour. Rinse all salt off under cold water, pat dry.
4. Lay salmon on plank, skin side down, evenly coat filet with sugar.
5. Lay fish covered plank on BBQ grill on medium-high. Close cover and check every 10 minutes, should take about 20 to 35 minutes. The cedar plank will burn: don’t worry. When the fish is ready, it will lift easily off the skin.
